Inspired by Melissa’s latest post about rainy day baking we decided today was the perfect day to make some delicious ‘Peanut-butter-in-the-middle cookies’. I used to make these cookies at least once a week when I was living in a vegan/activist flat in Wellington and they always all disappeared the very day I made them! Aesop didn’t find baking as much fun as I’d hoped, he just threw everything off the bench and got bored very quickly, I guess perhaps he’s still a little young to get too involved.
Here’s the recipe in case you’d like to have a little rainy day bake session of your own:
Dough:
1 1/2 C flour
1/2 C cocoa
1/2 tsp baking soda
1/2 C sugar
1/2 C brown sugar
1/2 C margarine (or butter)
1/4 C peanut butter
1 tsp Vanilla essence
1 Tbsp arrowroot and 2 1/2 Tbsp water
Filling:
3/4 C peanut butter 3/4 C icing sugar
Mix the dough in one bowl and the filling in the other.
Take a piece of the dough and flatten the ball into your palm. Take a smaller ball of the filling and place it in the centre of the dough. Fold the dough over the filling and roll into a ball.
Place the balls onto a tray and flatten slightly with a fork.
Bake at 190C (about 375F, I think.) for 7-9 minutes.
Hopefully tomorrow is a sunnier day and we can get some washing dry!
